Born in the wild heart of Maremma, between Rome and Tuscany, he grew up surrounded by the authentic flavors of Italian tradition. The scent of fresh herbs, the silkiness of homemade pasta, the rustic flavors of ingredients from his father's field—these were the foundations of his childhood. In the family kitchen, he watched, tasted, and unknowingly developed a sense of the perfect taste—the one that stirs emotion and leaves a lasting mark.
Yet, his path didn’t lead him straight to the kitchen. With a degree in engineering, Paolo first dedicated 11 years of his life as a lifeguard at sea. There, he forged the values that still define him today: rigor, humility, a sense of honor, and an ability to manage the moment with absolute precision. But beneath it all, another fire was burning—an undeniable, visceral calling: to cook, to share, to create.
He boldly traded the open sea for the kitchen, embarking on a journey of culinary discovery alongside the best. He has immersed himself in the excellence of Michelin-starred Têtedoie in Lyon, embraced the art of generous cuisine at Mama Shelter, perfected his craft at A Modo Mio in Aix-les-Bains, and in the prestigious restaurants of Málaga.
